The luncheon club team went to town this Wednesday as we joined in the celebrations for the Queen’s Platinum Jubilee. Superb food, live piano music, servers in festive dress, and the usual friendly welcome – what’s not to like!
The kitchen team pulled out all the stops to create a wonderful culinary experience. After a soup starter, the main course featured a varied platter, with Coronation Chicken and the Jubilee Beacon Tart alongside ham, egg, coleslaw and a salad medley. The tart boasted ingredients to represent each of the four nations of the UK: Cheddar cheese for England, potatoes for Northern Ireland, salmon for Scotland, and leek for Wales. If you want to have a go yourself, you can find the recipe here.
And the trifle, of course, was the winner of the Platinum Pudding competition, a tasty lemon Swiss roll and amaretti trifle. The winning recipe is here, and is quite complicated, but you can ask Beryl if you want her short-cuts and time-saving tips!
And if you’re after more celebrations, why not pop along to some or all of the events that are on all day at CLM church this Saturday. Whether breakfast barms from 10am, a nostalgic lunch menu at midday (with entertainment from a ukulele band), an afternoon Golden Oldies sing-a-long, or hot dogs and a fun family quiz from 4.30pm, there’s something for everyone!
